Since the winery's beginnings back in 1890, the vineyards of Bodegas Herederos Torres Burgos have been located in the highlands of Moriles, an area classified as having the highest quality within the Montilla-Moriles designation.
It is there that the Pedro Ximénez variety grapes are produced and harvested, which are later taken to the Lucena winery, where the must is extracted and classified according to its different qualities, and after fermentation, it is put into the barrels.
